I feel pretty safe in saying that after its all said and done, Inoue will do her thing and Nel will be back to her hot babe form permanently. She only switches because her mask is messed up right? We've already seen Inoue heal arrancar (Grimmjaw's arm) so I know she has the ability to, she just hasn't had a chance to yet due to all the fighting.
