Definitely Cowboy Bebop. The opening is great, but the overall music is just as great. Songs like Blue, Rush, Tank!, Bad Dog No Biscuits, Too Good Too Bad, Words That We Couldn't Say, and my personal favorite (although I'm not sure if it was in the anime, or only the movie) What Planet Is This, make this, in my opinion, the best music I've heard in anime. This is probably one of the few anime music that I will listen to just for the hell of it. Other anime has good music that meshes with the anime well, but I won't be listening to that music alone.

The opening theme for the first 12 or so episodes of Eureka 7 is pretty good. Again, I probably won't listen to it alone, but it's still good as it is. Also, although this song is more sad, and possibly a little creepy after watching the anime, the opening for Elfen Lied is one of my favorites. I just like the emotion of that song.

I think Elfen Lied have got very good music.
Especially the intro and outro is great.

i know its been said, but i dont care. cowboy bebop and samurai champloo. cowboy bebop's "tank!" in the opening will already let you know youve just stumbled upon some of the best anime music EVER. yoko kanno doesnt dissappoint either. samurai champloo is great if youre a hip hop head like i am. you dont even necessarily have to be into hip hop either. the music is very jazz inspired. nujabes is a musical genius.

I liked the opening of Evangelion! (Hence, the username.)

Tengen Toppa Gurren Lagann, Blood+ and Shaman King. FMA had some great openings and endings too.

I haven't actually watched all of Bebop and Samurai Champloo but I do have their soundtracks =O I think that gives a pretty good idea of how good the music in it is..

I'm personally a sucker for really good battle music...I think over all Gensoumaden Saiyuki has my alltime favorite soundtrack (openings, character songs, insert songs, extra songs, bgms, all of it!), but I also really enjoy Ueki no Housoku's battle music (and I loved the first two openings Falco and No Regret <3).

But, anything with Kajira Yuki is always good! Things like .hack, Tsubasa, Noir, etc...
