Soul Eater, Gurren Lagann, Bleach, Hellsing, Studio Ghibli's movies, FMA, Cowboy Bebop, Eureka 7....personally I think most anime music and j-pop is good. If you want to just watch anime w/ good music these are pretty good but if you just want the music go to realitylapse.com that's were I get most of my music.

Full Metal Panic! - All three seasons have very good opening and ending music
Suzumiya Haruhi no Yuutsu - There's a song in one of the episodes call "God Bless"
Beck - Anime about music, so it definitely has music, lol
Blood+ - Good anime and good music
Gundam Seed - Might not suit everyone's taste, but some of the music are good
Gundam 00 - Same deal as above ^
Air - pretty tragic story, the opening is call "Tori no Uta" and it's GREAT!

zetsubo sensei's one opening was mad catchy
