Try the work of Kei Kusunoki, especially Bitter Virgin. Formally classified as seinen (published in a seinen magazine for one thing) but regularly described by fans as shoujo. And it's brilliant.

Solanin is seinen but is very character focused-and it's got fabulous art

Nodame Cantabile is josei, but pretty low key-relationship/character oriented but not so soapy and has a sense of humor
(edit-I know you're already reading it, leaving the rec in case anyone else wants something similar.)

Hourou Musuko is very sweet gender-bender seinen that focuses on kids, but explores the themes well, keeps out the fanservice, and has plenty of cross appeal

Mel Kano is a collection of seinen oneshots that could probably be josei if the pov was switched

Kobato is one of my new faves- it's adorable, it's seinen but could be shoujo/josei/etc-it's CLAMP

Victorian Romance Emma is a seinen but it's veeeery romantic <3 (think Jane Eyre, but the female protagonist here is a maid) and has pretty art, amazingly detailed (especially in volumes 2+).
