I was wondering if there were any manga that have a situation that is sort of like a spoiled, maybe arrogant-type uke who is also really blatantly childish and demanding, and a seme who is kind and doggishly dotes & fawns on him? I really feel a sort of fondness for this dynamic ^^;;;

Ohhhh, one of my favorite yaoi dynamics! I love the spoiled rotten uke and the seme who bows to his whims.
Off the top of my head:
Kono Ore ga Omae Nanka Suki na Wakenai by Ogawe Chise - I think this one fits your criteria to the T, it's one of my favs for this reason.
Ouji no Hakoniwa by Ogawa Chise - It's a little darker in tone, but it's got the same concept.
Maybe Gosan no Heart to some extent.
Ouji no Kikan by Junko (the first story). I don't think the uke exactly fits the spoiled rotten mold, more like he appreciates the loving attention he gets from the seme, and he's kind of tsundere too. Still, as you can see from the cover, it's stylized with the prince/princess(uke) type trope XD
Honoo no Suna - by Tamaquis Wren - in fact, if you read any of her Middle Eastern-themed yaoi, they're all written in much the same manner. Handsome sheikhs that spoil their ukes with jewelry, money and lots of gratuitous sex. Not all the ukes are the same though, some of them are more low key but it fulfills my spoiled uke kink XD
And if you ever want to consider tackling a serialized light novel that's being translated by some very devoted fans (there is also a manhua):
Feng Yu Jiu Tian by Feng Nong (writer) and Wang Yi (artist) - Feng Ming is the epitome of the spoiled little diva because he's from the future and it puts him at an advantage with the time he's now living in. You could argue he's a bit arrogant, but in the spoiled lover type way. The manhua hasn't gotten this far yet, but Rong Tian dotes, absolutely dotes on FM. He teases him and spoils him rotten, and it's so adorable and cute! It pushes all my buttons, lol. But don't get me wrong, FM is still very likeable, he's kind, pure-hearted etc. too, he's just that way around RT because that man loves to indulge him.
