I'm a big fan of things like Trigun, Gunslinger Girl, Ghost in the Shell, and Cowboy Bebop among many others. I like the gun stuff to be as real as possible. I like mangas to be more geared towards adults than children. .

Maybe a manga about assassins?
Maybe a good cyberpunk manga with lots of gun play?
Maybe a wastelandic manga?
Maybe collapse of civilization manga?

I was pointed to Angel Heart but it was way too slow for me.

The gunfights in Battle Royale are pretty realistic.

Angel Heart, maybe? Its certainly a manga about assassins, although I'm not certain its what your looking for.

Black Cat isn't that realistic in its gunfights.

It's not incredibly realistic (actually, it's not at all), but I have a lot of friends who enjoy the same type of stuff and swear by Hellsing.

I'll second Eden as well.

seconding gunsmith cats and it's a bit of a stretch but there's some pretty interesting gun play in gantz, espicially after the story goes on for a bit(note: though their not typical guns, either you can find out in the manga or here gantz guns

C.A.T. has 100% realistic fights, but they really don't concentrate on the gun battles.

In Highschool of the Dead there're real good guns. The characters are adolescents though, so choose by yourself.
