Franken Fran has ridiculous medicine. Say Hello to Black Jack (not the same as the standard Black Jack mentioned above) is also good, but remains mostly untranslated.

Super Doctor K isn't in the manga database here, but it's a 40+ medical manga about a super buff fist of the north star-esque underground doctor made in the early 90's. Not that it's translated or anything, as no one in the world seems to know about it other than me (and you now).

Apothecarius Argentum is a historical medical manga about an apothecary
I also second Askelpios but again that's modern(ish) medicine in a historical setting.
Monster is about a surgeon. (Not yet read it so can't tell you how relevant it is sorry)
That's all the medical ones I can think of.

The pen is mightier than the sword...and considerably easier to write with.
