I wasn't real impressed with it at all, but I read this oneshot with pretty much exactly that sort of plot just a couple days a go.

Other than that I can't really suggest much; there usually aren't many guys in the yuri manga I read.

If your willing to check out an anime, I'd suggest Kannazuki no Miko; it has a guy vying for the attention of a girl with another girl.

Not exactly what you're looking for but you can try Kashimashi. The main girl doesn't like guys and she became interested in a guy she rejected before when he "becomes" a girl (you should read it to understand this).

I also second Kannazuki no Miko anime.

haru yo koi starts out sorta like that, but its not really yuri later on. i stopped reading it because i felt it was just seinen smut, lol but u might wanna check it out
