I'm not a huge fan of shounen epics, I do read Negima and D.Gray-Man to pass the time though, they fit my type of interests (D.Gray-Man's loose religious symbolism, Negima has the strongest comedy-harem element and I have a soft spot for fantasy) more directly than the others.

I enjoyed Trigun and Black Cat a lot, Trigun was one of the manga that really got me started. Death Note is one of my favorites because of its complexity, and GTO was awesome.

Evangelion is my favorite Shounen though, I think. I'm one of those weird people that actually enjoys characters that have issues, and lots of religious and psychological parallels that run rampant throughout the story. It's not so much about the mecha battles as it is about the characters, which still remain complex and interesting (yes, Shinji included. I like his weakness because it's rational.) I just wish the mangaka would publish the chapters more often, the ending is clearly going to be a little bit different and that has me very interested (although I liked both of the anime endings.)

For completed manga: gotta go with GTO. So awesome I don't know how to describe it's awesomeness.

For ongoing manga: I'd have to say either FMA, Beck, Eyeshield 21, or Claymore.
Beck and Eyeshield 21 are classic zeroes becoming heroes kind of thing, but done through fairly unique ways: rock and american football in japan. Both executed fairly well as well. FMA and Claymore are series with very dark and mature themes that you's expect in manga with a seinnen demographic, mixed in with some action and fantasy.

hikaru no go and hand down with that ....

• very nice drawing (no wonder it's obata... deathote's mangaka)
• extremely clever ... One of the few among shonen to have a true message
• best depiction of character ever
  On the contrary to basically every other manga that focuse on the hero and the effect he has on his relatives and friends there a lot of very complex triangular relationship
  for instance
  -hikaru-akira-sai
  -koyo-ogata-sai
  -honinbo-ogata-gosei
  and the feelings between characters are so complex :the relationship between sai and hikaru runs so deep it's an earthquake when he eventually disappears .... He's in the same time his best friend , his big brother , his mentor , a mimic (how many times did they carried out a perfect sync movement together) , a jealous opponent (so afraid about hikaru erasing his name, about the time hikaru has and that he doesn't have ), etc...
  the same goes for akira : his main rival ,sometimes at odds but in the same time with big respect and fear between them , to a certain extent a friend , a source of inspiration but also of problems considering how insistent he can be when it comes to sai....
• and on top of that very original : it's not about fights , super powers ,.... just about a strategy game and what it involves.....

GTO for me, HxH is also an excellent manga to read, but when the author dragged it out for so long, it became plain dull
