You should check the World Travel tag.

This sense of adventure and meeting various people/settings is becoming actually rare IMO in recent mangas. Gate - Jietai Kare no Chi nite, Kaku Tatakeri and Drifters might actually get that later on, but they don't have enough chapters out to get a definitve perspective.

Other than that :
Juuni Kokki You can also try the anime, but it doesn't cover as much as the novel, very good tho.

Blame! Seinen and not fantasy but s-f setting. A lot of original creatures/people and bizarre locations make it fit what you want tho.

Those are all relatively well known titles, but for what you want I think it's inevitable since it needs world building which in itself needs a lot of chapters and therefore popularity.

I'd start with GUNNM or FMA, since they're actually completed, and GUNNM has a sequel.

Dimension W only has a few chapters scanned.

Kubera sounds really interesting. & some of these Nanatsu reviews make it sound epic as hell.

@sunder, I've already read those bro. Alita's a damn good example of world building though. Actually , not that I think about. Still don't think I've read the last volume of FMA. any1 seen the anime? is it accurate? because I'd rather watch it in all it's animated glory.

I haven't watched FMA Brotherhood (latest anime adaptation) but from what I understand from reviews it follows the manga plot more closely, and doesn't deviate from it like the 1st anime did.

BTW if you like anime and adventure/world building you might check all the Ghibli movies like Castle in the Sky, Ponyo, Nausicaa, My Neighbor Totoro, etc... They are very good at that usually.

A very old anime which does what you want is Galaxy Express 999 by Leiji Matsumoto (famous for his Captain Harlock). It follows the adventures of a young man in "space train". It's full of weird people and strange culture/civilzations. If you like Matsumoto's art, it's a great watch.

Another old anime from the 80s which you might like is The Mysterious Cities of Gold (Taiyou no Ko Esteban). The MCs discover ancient civilizations, and remnants from the incas/aztecs, with strange artefacts. My favorite in the adventure genre, must watch if you can stand the animation from that era (and manage to get the anime which could be very hard).

you could check out the Gundam series, in my biased opinion Gundam Seed and Gundam 00 are the best of them though
