Do you feel some manga just don't end when it should?
I mean tons of manga have perfect endings somewhere in the middle. It should have just ended it but nooooo, it has to continue.
The manga industry is not sending out good messages by not ending things. I mean some manga works as like long mangas like Prince of T or Slam dunk, but most romance ones are not.
The most ironic one being. GE Good ending is one that missed the good ending by 100 chapters.

To be fair, GE could have ended around chapter 69 but there were still some issues that needed addressed to wrap things up. What appears to be happening now is that we know the 'final boss' is still around (Tooru). As long as that issue isn't resolved, the mangaka seems to think she can take all the time she wants and draw everything out.
There are too many manga to name that need(ed) to end or ones that just add filler. Love Hina added that whole bit about Keitaro's sister coming back. Bleach....well, that's all I need to say.
Conversely there are some(many) that ended too soon or started an arc and didn't finish it. Negima went on for a loooong time, it could have ended a couple times, but just as it started THE major arc that could have taken it another 100 chapters - it ended. Bakuman could have gone much longer but I can understand why it ended when it did.
btw, the number one, undisputed champion of the "Just End It" category is Pastel.
It does not end and nothing happens but I'm strangely compelled to keep reading it. You could have stopped reading around chapter 90 and been fine. It's currently at scanlated up to chapter 128 in Volume 27, it's been released up to Volume 31 and is still ongoing. Oh and did I mention each chapter is 50 PAGES?!

In theory, yeah, they should just end the series. But that's just in theory.
In actual practicality, where money's at stake, slitting the throat of their big cash cows isn't in their best interest.
Bleach is the best example. Kubo Tite was basically a failed mangaka prior to Bleach. It's rather evident that he doesn't have much (if any) talent when it comes to writing a series, but he makes tons of sales from simple yet good looking art and sword fighting.
The manga industry is extremely cut throat and it's rare that you find mangaka that make actual money from it. Yeah, the elite like Eiichiro Oda & Toriyama Akira are millionaires. But the vast majority of authors barely break even, let alone make a decent living.

not everyone can be millionaires, especially when you suck at what you do.
But the thing about J drama is that it's shorter than k short k dramas by about 6 to 10 epsiode and shorter than chinese dramas by like 30 episodes.
why can't they go that route.
Since you mentioned bleach and one piece, this is like the perfect contrast.
on the one hand bleach should have ended with the defeat of Aizen and not in a way that makes me want to go to japan and kick the author's ass.
On the other hand, One piece is actually getting better a little bit as it goes on, sure there are misses here and there, but the main thing is that it's awesome.

George Lucas made a cash cow and has only made 1 extension to his original story in over twenty years. If you know how to use it properly you don't need your cash cow to be covered in tumors and life support till it looks like its a special needs alien

Yea I have to agree some manga should end. If there is an opportunity to end the manga early on with all the questions answered it should be taken especially with romance manga. It shouldn't be dragged out so much.
I read Hayate no Gotoku latest chapter 371 and felt that should have ended ages ago, after reading it. Though since its a comedy manga that has a plot it has to be dragged out to finish the story. Half the time HnG doesn't even focus on plot as well so I probably expect this to go on till its reached chapter 500. 😔

Pfff if you think thats long try Detective Conan, 70-80% of the time, even more maybe (a number out of my ass) has nothing to do with the story, just solving murder cases everywhere, if theres a story that needs to end than its this.

what the individual person thinks is irrelevant
bleach is still one of the major selling mangas
in other words
one of the more popular
if you feel you have outgrown this jump title...probably means you are not the target audience
aand thats the same with every major "long" manga title
the mangakas for the most part work fulltime with making comics
and its very rarly up to the manga him/herself to end a comic
you work for the company that publish the manga
so you cant just end something that brings in lots of money that put food on 1000of ppls tables whenever you feel like it
you have responsibilities
[mostly to the bigbosses but...it sounds better this way]
if you did...you would be difficult and would have a VERY hard time finding a new employer

Death Note Should have ended episode 12. Before introducing Misa Amane and the sack of Garbage REM.
I require the author of death note to apologize by form of hari kari for the abomination that followed.
He could have ended it episode 25/26 with L getting offed by Rem and Watari offing Light and avoided the worst possible outcome, need to suicide to restore honor. but he didn't

Never read Detective Conan but if the manga is interesting then let it can continue. If it is interesting people will enjoy reading it. There's plenty of slice of life, mystery and other genre manga that don't really have a plot but are interesting so it doesn't need to end. I said that about HnG because it doesn't feel interesting anymore apart from the plot.

Well i gave up Detective Conan at chapter 200-300ish just felt repetive, endless locked rooms mysteries and murders wherever they go, was getting boring, had like 2-4 events related to the main storyline, been awhile since i read it so im not 100% sure.

Honestly, I think Hunter x Hunter should have ended last arc. If Togashi didn't add all that foreshadowing for the next arc in the last couple chapters, the manga would have had some nice closure...Gon and friends have more or less accomplished their overall goals.

Anyways, may not just be the mangaka's fault for continuing to milk a series. Publishers may also have a hand in it...more $$$$ for them too. Why take a risk ending a popular series and allowing the mangaka to try something new that may flop. Also makes their magazines sell~ Introduce fans/customers to new series and potentially create a new popular hit that will rake in more cash.
Shueisha is probably smiling all the way to the bank since One Piece is bringing in so much money and it won't be ending anytime soon (only half way done? lol)

on the other hand many good manga that end after 3-4 volumes with a good ending has lots of "It's already over?! I wish it was longer" or "the author could've continued the story some more" etc. Guess some people can't be satisfied 😀 . My point is that the fans are the main reason that some manga go on and on.
