Legend of the Strongest Man, Kurosawa - The first two volumes are filled with awkward, depressing plotlines; in the third volume and beyond, the series develops a superb balance of action, comedy, and drama to complement the depressing awkwardness of the titular protagonist.
Seconding this whole-heartedly!
I liked the first few volumes very much, but it was later on that this manga started to get really good. The last volume was a mixture of hopefulness and tragedy that really struck me. It was lovely!

Like Violin. About 10 chapters are just discussion about playing the violin, 11-16 are more about dilemmas, 17+ the story appears 30+ the romance erupts. only scanlated to 1 chapter (used to be 7, is being redone 😛 ) though.
Let's just say Tarot Cards rule.

Banana Fish - Just because it all started to come together.
Fairy Tail - At the start I thought it was just another typical shounen, which it is, but I much prefer the story arcs to other main-stream shounen series.
Nurarihyon no mago Very weak start, I almost dropped it, but it got a lot better.
Code: Breaker - I agree that this had a pretty mediocre start but had developed into something interesting.
Angel Sanctuary - Mainly because it got less confusing as it went on.
E's - Starts out seemingly pretty standard but seems tobe developing into something much more intricate and dark.
07-Ghost - At first I thought this would just be a revenge manga, how wrong I was.
Skip Beat - I actually enjoy the slow moving romance and tantilising hints at Ren's past.Usually I don't care who ends up with who, but I find myself actually drawn into this manga.
The pen is mightier than the sword...and considerably easier to write with.
