I second Change Guy.

Alot of the mangas I had in mind have already been mentioned but here are a few more that I may not have seen and have read.

Veritas starts off okay but then goes up a few notches and into the paranormal :/ but still takes martial arts really seriously.

One that hasn't been mentioned is **Baki ** (I thought it'd be a pretty obvious one :/), but it does seem slightly unrealistic at times. Stuff you'd hear in legends.

All Rounder Meguru is also one that I liked (although I've only read a few chapters).

And of course Tough although I had to read all the prequel in france. But the sequel is available to read online.

That's another one I'd never consider realistic. And pretty lame stuff you hear in legends.
