B.Reaction! (a short ecchi martial arts manga)
Basilisk (a historical ninja manga with supernatural ninja powers, realistic style)
Demon King (typical korean martial arts manhwa)
Evil Heart (aikido drama, kinda psychological)
Getsu Mei Sei Ki (great historical manga about Shinsengumi, great art) Morita Kenji manga!
Hitokiri Ryouma (another great historical manga, consists of three short stories)
Holyland (psychological martial arts manga, mostly psychological)
Kenji (the Chinese martial arts manga, very realistic, many different styles and deep technical detail, a great read)
Kenka Shoubai (as it's name says, there's also comedy but the fights are serious)
Kaze no Sho (one shot historical manga) Taniguchi Jiro manga!
Sengoku (another historical manga, but focuses more on warfare than one to one combat)
Shamo (this covers fighting, martial arts, and almost superhuman skills, dark psychological manga, and the protagonists isn't just improving all the time, but there's ups and downs, and what I've seen so far, his skills have gone to be not so impressive and very limited, but that's exactly what makes it so interesting, currently on hiatus at 25 volumes)
Shigurui (historical manga, one of the greatest there is, breaking limits and reaching to almost god-like skills, while still staying inside somewhat realistic bounds) Nanjou Norio!! Yamaguchi Takayuki manga!
Sidooh (and yet another historical manga, this time very much different from the usual historical martial art mangas) Takahashi Tsutomu manga!!
Souten no Koumori (ninja one shot)
Storm Riders (a great example of Chinese martial arts manhua)
Ultra Red (give same kind of feeling as B.Reaction!, though this one is not ecchi)
Vagabond (the samurai manga, about the life of Miyamoto Musashi!) based on a novel by Yoshikawa Eiji, Inoue Takehiko manga
Vinland Saga (the viking manga, alot fighting - viking style) Yukimura Makoto manga

I second kenji.
Great martial arts manga with many kinds of kungfu in it. The artist actually drew the stances in case you want to learn some. ^^
The art is also very good and realistic

History's Strongest Disciple Kenichi

It's one of the best manga's out there, out of all genres! It's about a weak school boy who gets picked on. He's ends up training in a dojo under 5 different masters: karate, jujistu, kung fu, muy thai, and weapons. This story revolves around martial arts and is 350+ chapters long. It'll keep you entertained the whole time. It's that good.

Not sure if I'd consider this a serious martial arts manga. It's more of a comedy than anything else. The martial arts are pretty unrealistic. Still pretty funny though.

Yeah trully is more gag than serious but they show some interesting things and also i like that they use real martial arts, so its not bad at all
