First Anime: Akira - which was a bit of mind fluck for a first-time anime viewer. Then it was GITS and nothing for a long time. Then I got into manga somehow, then a natural segue into anime once more.
First Manga: Love Hina - still a favorite and dangerous to start if I have a desire to sleep at all that night

First anime: can't remember the title it was 17 years ago more or less. It was about microorganisms in the body and how they fight diseases. Educational adventure.
Haven't seen it myself, but Wonder Beat Scramble seems to fit your description.

It is a french educational animated series called Il était une fois... la vie. They have done several series in that fashion, like in space and the telling of man on earth and the Americas and such. I remember it well since it was my favourit program growing up. In Sweden it was called En cell-sam historia and in English it was called Once Upon a Time... Life.

Anime as a child - either Capitan Tsubasa, Yattaman, Tiger Mask, General Daimos, Dash Kappei, or some other old series that was being broadcast in my country.
The first one I watched when I was a bit older and still not a fan of anime - Hellsing.
The first anime(s) I chose to watch - Elfen Lied and FullMetal Alchemist - friends from a fantasy/scifi website dragged me to a m&a convention that was taking place in my city, first 3eps of both titles were screened at night. I liked them, so once I got home, I looked them both up.
First manga - Death Note.
I was following the anime from the beginning and when the fansub groups dropped it (ep12), I picked up the manga.
You can PM me if you need a temporary (freelance) cleaner/redrawer for some project. Especially if it's something with nice art.
Being the lazy person that I am, I'm not likely to accept anything long-term though.

I'm not too sure, since I'm already for quite some time into Mangas, but it should be Ranma 1/2 or something from the 90's era. As for anime the first really captivating one was "The Vision of Escaflowne" ( 天空のエスカフローネ or as manga titled Tenkuu no Escaflowne), before is just took a glance every now and then at "Mila Superstar" (アタックNo.1)and others similar to it.
"It's like love is a bonus in your life. Even without it, I'm just fine. I don't feel like pointlessly searching for it. You don't have to make yourself unhappy." (Ookami Shoujo to Kuro Ouji)
"Why does it rain?" - "To create drama." (Drops (Andou Yuki))

First anime: It's a tie between Inuyasha and Tenchi Muyo (Ryo or Universe).
First Manga: Kou Kou Debut
...don't ask me how that happened.
I like my men androgynous.

No clue on anime, as I just kinda watched whatever was on TV back then. I watched a whole range of different stuff at that time. Like, finally released from the strict restrictions I had on TV and stuff. For manga... probably Bride of the Water God or Ouke no Monshou. Not quite sure, think it was the former one. The later one was recommended to me by my mom. Apparently it was popular back when she was in high school, her class circulated the manga volumes and stuff.

First manga was Doraemon.
First anime was Inuyasha I think. Or Fullmetal Alchemist (Thus cementing my briefly held belief that anime were all manga adaptations, of course, and by brief I mean two years). There's also a terrifying possibility that it was Yu-gi-Oh!.
Oh Goddammit it was Pokemon!.
“You know what makes humans different from other animals? We’re the only species on earth that observes shark week. Sharks don’t even observe shark week. But we do. For the same reason, I can pick up this pencil, tell you it’s name is Steve and snap it in half and part of you dies, just a little bit on the inside. Because people can connect with anything. We can sympathize with a pencil. We can forgive a shark. People can find the good in just about anything but themselves. You are all better than you think you are.”
