I'm looking for an unrepentantly fat female character who doesn't give a flying f*** what anybody else thinks of her. I don't want her to have any issues with her weight or trying to go on a diet to look better for the boys. She can be pretty or ugly, I don't care, but I just want a fat female character who is comfortable in her own skin and who isn't ashamed to be the way she is. Other characters can make mention of it, or even make fun, just so long as she isn't ashamed or trying to get rid of it or change. she can be a side character, or, preferably the lead.
(Actually I'll probably accept any female who has confidence in herself and in her capabilities at this point, I'm kinda desperate to read about a girl who doesn't have major self-confidence issues or who isn't constantly trying to fit in or whatever. But preferably fat, and if that's not possible at least different, nerdy, awkward, or something... However like I said I'll accept almost anything.)

I love your request. I wouldn't mind reading stories like this...with a female lead like this.
Okay, as for the recommendations. I never read a manga with a fat girl who didn't want to change. But here are some others with similar themes, which you mentioned you might accept...
Warau Kanoko-Sama --- Kanoko, the female lead, is an eccentric, observant, and geeky girl who is confident on who she is and isn't interested on changing herself.
Nodame Cantabile has a female lead that is hilariously strange and, at the same time, a genius at a certain skill. It's hard to find both sometimes. She doesn't try to change, in fact, I don't think it ever occurs to her.
Penguin Revolution ---The story sounds typical and when I read it, I expected the main female character to go the same route. But I was pleasantly surprised, she is a character who is very level-headed and confident on who she is.
Seigi no Mikata is a story about two different sisters. The older sister is the type of person who says what ever she wants and, no matter what, the results are always good. She is always extremely confident in what she does and who she is. There's even a drama on this, which I also recommend.
Akuma to Love Song ---Is the one I hesitate to recommend, because it's been a long time and I cant remember the details. From what I remember, she is blunt to a fault, to the point of being brutally honest and seeming outright rude, and she wins points just because of her eccentricity. For the most part I think she is comfortable in her own skin, but gah, I'm unsure. She gets in to trouble with some people because of it—so it might be possible she doubts herself a bit. You might like it anyway though, so here it is.

Not the main character, but the main character's best friend in Nanaco Robin is exactly like that. She's great.

It's been a while since I read it, but Miracle Dieter Miyuki might work.
Basically, the main character starts off dissatisfied about being overweight and during the course of her dieting, she finds a dumbbell that transforms her into a skinny, magical girl. The entire manga is a Sailor Moon-style parody of dieting, weight loss, etc. (The bad guys try and give people junk food or trick them into fad diets, Miyuki gives them healthy snacks.) However, she ends up comfortable in her own skin and doesn't mind being chubby because she is a healthy eater, which is what counts! LOL.

I can't think of any about fat girls but as far as staying true to yourself I think Kuragehime might work.
I haven't read it recently but from what I remember it's pretty much a bunch of otakus who live together. The main character ends up meeting a cross-dressing guy and things go on from there. All the characters are pretty cool but I think her housemates fit the bill, in particular the one (I can't remember her name) who is in love with dolls and kimonos. She's on the rounder side and absolutely hilarious.
Also Gokusen could be good. The main character is always true to herself and loyal to her family. Plus the manga is really funny :]
