I’d recommend a lot of Junji Ito’s work.
I also read a lot of short mangas so feel free to look through my completed list and you’ll find quite a few.

Here are some 1/2 volume length shonen/seinen I liked:

All You Need Is Kill
Omoide Emanon and its related series
Suiiki
Satougashi no Dangan wa Uchinukenai
Solanin
Getenrou
Swweeet
Kami-sama ga Uso o Tsuku.
Watashitachi no Shiawase na Jikan

I hesitate suggesting 3-5 volume and longer works as, though they are binge-worthy, it does get exhausting to read them in just one day. But if that's your thing, I might suggest a couple more.

I just finished Solanin. It's 29 chapters and by the same author as Oyasumi Punpun. It's a cute, bittersweet story that I think was a nice read.

Lovely Strange Dark scanlates lots of great short manga and oneshots, you should check them out!

Aside from that, here are some bingeable, completed series:

Bibliomania - Read it for the art if nothing else, it's a thrilling fantasy w/ light horror
Gozen 3-ji no Muhouchitai - Quirky josei romance, a fun, chaotic read about working life
Junjou Drop - Super fluffy shoujo, condenses the fun bits of the genre without all the drama
Neko ga Nishi Mukya - Chill and episodic supernatural SOL, from Mushishi's mangaka
Nickelodeon and Melancholia - Weird and interconnected short stories at eight pages each
Ritou no Umi - Again, read it for the art if nothing else, full-color seinen SOL about island life
Wakusei Closet - Sci-fi thriller with great characters, world-building, and a twist end

Goth is a one-volume favorite of mine, made of linked short stories that are dark mystery verging on psychological horror. The manga is based on Goth (Novel) by Otsuichi, which I also like, but I think the manga does a better job of rearranging & streamlining the stories to make them flow together more smoothly.

I'm not really into "short" story, but these are the best I have read :

Oneshot :
Arigatou tte Itte

Around and under 5 volumes :
Itsuya-san -- recommend other Mizu Sahara's works
Kanata no Astra
In this corner of the world
Tasogare Memorandum

Above 5 and under 10 volumes :
Zense Coupling
