Sorry for you: I'm an experienced (20 years) fisherman (saltwater/freshwater) and it NEVER occurred to me that beheading a fish woud result in a "still living" effect like you said.

Just for those who doesn't know about this dish:

They knockout a live fish, cook the body but leave the head un-cooked. Technically the fish is dead. The twitching it muscular and spinal response. It's like chopping off the head of the fish and then putting it on the plate. the body is totally cooked. It looks fresh, **as if the fish was alive, but it is not. **

Watching this made me remember about a thing I saw when I was younger: 3 people beheaded about 10 or 12 chickens and after they finished they let the animals run around headless behind the block of flats until they dropped dead.

I found a video of a Japanese dish in which fish are cut and stripped of their skin and flesh. Then they are released into the tank so they can grow back their flesh and be cut again......that's real animal cruelty...I can't believe there are actually applauses in this video...
