I second Gantz for awesome sci-fi futuristic weapons.
If you want swords, try Blade of the Immortal.
For guns, I think all of the weaponry used in Gunslinger Girl is real.
The weapons used in Shin Angyo Onshi and Shaman Kingare also pretty cool, IMO.
It's an anime, but the fictional weapons (outside of Togusa's Mateba autorevolver) in Ghost in the Shell anime series are pretty cool (I particularly like Saito's sniper rifle he used in GitS: Stand Alone Complex Solid State Society).

I saw a recommendation for Tenge above, thus it should also follow that you should definitely try Air Gear. Oh Great makes really awesome concepts and designs, and Air Gear has a niche of "weapons" that are refreshingly original.

However, it's not always the hardware that make a weapon, it's the user's methodology and execution that also makes the instrument great, as well as the artist's expression. In these aspects, Berserk, Blade of the Immortal, and Hellsing are excellent examples.
