A lot of good ones have already been mentioned, but if you don't mind Science-fiction, take a look at Yome ga Kore na Monde. by MIYATA Kouji. It's a humourous slice of life about a salaryman, his alien wife and their interspecific baby.
There is also a newly scanlated series that looks promising: Chichi Kogusa by TAGAWA Mi. The setting is ancient Japan where a wandering herbalist and workaholic tries awkwardly to raise his son after his wife's death.
ICHIKAWA Shou's Papa to Mama Hajimemashita. might fit as it deals with childcare in a more Shoujo-ish, but cute way.
Last but not least, you could peek into Nicoichi by KINDAICHI Renjuurou. Raising a child is not the main point but it does deal with a rather unusual single parent.
