welll....i actually am not really sure with these rec, but try browse through them.
Bambino! about a chef. theres no extreme food or crazy cooking competition, and pretty realistic.
7 Seeds the struggles of a bunch of young adults after the apocalypse. they use their heads to live, and very engrossing read. the characters are realistic for example the first female protagonist is just like us.
Dorohedoro i am conflicted to give you this, but the magic power seems pretty straightforward, no one get super duper transformation through the power of will.
Beck about music. the protag dont magically become talented, he work hard.
Mx0 the protag have to use his brain because he dont have magic power in a school of magical users. and no, he dont have any dormant power that will be unleashed when his beau is in need.

Jisatsutou-same author as holyland but instead of martial arts its survival skills and hunting that are explained.
Kurosagi-you seem to like dramas, and there's a drama for this too. Its similar to liar game, except its about swindling.
Moyashimon-kind of fits except they don't explain (at least not in the bit i read up to) how he has his main power, but they explain everything else. Its all about bacterial processes and stuff.
Bartender-bartending skills to deal with various peoples' problems. So skills>plot that its mostly episodic.
Sommeliere-Similar to bartender except its about wine.
Kokou no hito-About climbing, doesn't explain things to the nth degree but what the mangaka doesn't explicitly tell you, you still pick up through context so you understand what the mc does, his skills and why he's able to accomplish what he does.
Amatsuki-to a certain degree...like its not completely realistic....cos there's still super powered people and supernatural beings and stuff. However the science behind the mc's attacks are explained and the science behind how he uses his power....although the reason why he has that power is a slightly dodgy reason, explained but suspension of disbelief still required to a degree.
