Basically a manga where protagonist likes guy/girl A, but is rejected and soon falls for guy/girl B in which they pair up, Guy/girl A then realizes that he/she was in love with the protagonist, buts its already too late

I suggest reading Uwagaki
It's very much what you're looking for. Guy is about to confess to the girl he likes but she rejects him before he even says anything. A teacher finds this situation interesting for one of his experiments. It's a what if she didn't already have a boyfriend she's in love with and if he would have had a chance. So he copies her. The 'copy' has no memories of the originals boyfriend. Giving the guy a chance to get the copy to fall in love with him.
