Ore ni Koi Shite Dousunda is my favorite, definitely. It's got incest (uncle-nephew), but not big enough of a deal (at least to me) to squick. Don't Stay Gold by the same mangaka might qualify.

Shujii. Physician and recovering amnesiac. There's a prequel but that one's less guardian-ish than this.

Ohana to Chocolate. Looks like shota, apparently does not qualify as such. But really, really looks like it.

Yurusareta Uta. Fantasy. Demon/master? I'm not sure that that's what you're looking for, though. Konoyo Ibun's of the same sort, although the relationship between the two is rather different. That one's highly recommended. ^^ Yami ni Tooboe, Mune ni Toge is another good fantasy one. (I'm sorry if this isn't what you're looking for! bows)
