Mmm...arg I need to read more books/movies greatly inspired by D&D...I tend to avoid them lol

At the moment. the only thing I can remotely think of in manga-ish form is:
Kubera - The setting and style isn't typical fantasy and it starts out a bit slow though~but I like it
1/2 Prince - In an MMO but still fantasy inspired

Novel/Series: Codex Alera by Jim Butcher (?)
No dragons but has magic and a very typical fantasy setting. The author actually wrote the series after someone made a bet with him to write a book that included ideas of: The Lost Roman Legion and Pokemon.
(I also recommend his Dresden files series. They are wonderful, funny, entertaining (yay pew pew magic) but take place in present day...)

May add more if I remember any~ 🤢

Log Horizon technically they are somehow trapped in a mmorpg but all the fantasy tropes are there.
The Twelve Kingdoms

If you want something a bit more traditional
Berserk
Bastard!!

If you're really jonesing for some fantasy you're going to have to find a real book.
May I suggest Diana Wynn Jones. She's written a lot of light fantasy.
The Discworld series of novels

http://tvtropes.org/pmwiki/pmwiki.php/Main/Fantasy <=== try here to try finding what you like. Expect to spend the rest of the day reading walls of text. You have been warned.

For fantasy series, these are my favs :

  • Malazan Book of the Fallen by Steven Erikson, probably my favorite. This is a must read if you want your fantasy epic. All the characters are badasses, the action scenes are some of the best in the genre, combining gritty military fantasy with magic in huge battles. This is definitely a dark world, and don't look for heroes, but the humor is great too with unforgettable dialogues (and monologues from the craziest characters too). If you like magic then you won't be disappointed either, there's everything : forgotten races, necromancers and their zombie armies, shapeshifters, dragons, demons, fallen gods, gates to other worlds, etc.. The main drawbacks to this series are the 1st novel, which is probably the weakest and might deter you from reading the rest, and the storytelling becomes very complex with a lot of characters and plots mixed in. At first you might easily become lost, but if you keep up, this becomes one of the best modern fantasy series.

  • A Song of Ice and Fire by George R. R. Martin. One of the best too. Very gritty, memorable characters, and great plot. Don't watch the TV show, read the novels, they are definitely better.

  • Gentleman Bastard by Scott Lynch. Excellent series focusing on a thief and all his adventures. Great characters.

  • The Stormlight Archive by Brandon Sanderson. I honestly was amazed by the 1st novel, and I am eagerly waiting on the next. This might become one of the major fantasy series if the quality keeps up.

  • The Farseer Trilogy by Robin Hobb. Another of my favorites, probably the best characterisation in fantasy. This is in told in 1st person, and it might repel some people, but I found it to actually enhance the storytelling. You'll end up rooting for Fitz very fast. You can also try other novels in the same world like Liveship Traders or Tawny Man, they are good but I still prefer Farseer.

Other good series but a level down, IMHO :

  • The Night Angel Trilogy by Brent Weeks. Assassin + Magic = Win.

  • Mistborn trilogy by Brandon Sanderson. Great series with a very unique magic system.

  • The Runelords by David Farland. Good overall series. Unique magic system.

  • The Sword of Shadows by J.V. Jones.

  • Wardstone Chronicles by Joseph Delaney. One of my favs in YA. Simple but entertaining, you follow an apprentice "Spook", whose job is to hunt down various monsters.

  • Crown of Stars by Kate Elliott.

  • Acts of Caine by Matthew Stover. The MOST badass protagonist in fantasy ever (wait until he's crippled and in jail to know what I truly mean). This is probably better described as science fantasy : a futuristic world manages to open gates to a fantasy world and sends actors there for entertainment. The plot might sound meh... but the execution is great, and the main character is definitely one of the best anti-heroes. Expect a lot of action and gritty fight scenes.

  • Legend by David Gemell. Excellent novel about a fortress being assaulted by barabarians. Think battle of Alamo but in a fantasy setting. Druss is also an unforgettable character. Action heavy and simple plot but it works 😉

I've tried focusing on more modern fantasy (2000+) and limiting myself to let's say classic fantasy, but there are other older works which can be just as good, and some urban fantasy can be quite good too. If you want more recommendations, just ask.

12 Kingdoms looks like a really good read, however I can only understand English and its not translated yet. 🙁 - I PUT IT ON MY WISH LIST

Everything else I've already read(ing). I'll look through the tvtropes website though.
And I've finished or am reading about two dozen on the list provided by Knightzomegaz, and still looking for more.

I've read a book called Eragon / Inheritance Cycle too, and it was amazing.

I guess what I'm looking for is a fantastical world surrounded in magic or sorcery and mysterious creatures and things the like. - I definitely suggest the two I listed, they are definitely underrated (or at least not well enough known?).

I'm having harder and harder times finding the amazing ones on my own at this point, I may have to take up japanese and korean XD

Actually Twelve Kingdoms was translated by Tokyopop years ago, upto a point at least. You can ignore that though, because it is a subpar translation. The books themselves look really nice and are well put together, however. They tried to force it into being more along the lines of a western fantasy novel, which it is not. Google Eugene Woodbury for a good translation of the entire series, as well as other books. I'd link you to his site but it may be against the rules. Besides it's really easy to find on your own. And aside from tvtropes being a huge time sink, it has actually helped me find things to read that I never even knew existed, which I actually ended up enjoying.

also, maybe:
Red River aka Anatolia Story
Guin Saga (Novel) SUUUUUUUUUUPER long. Downside is there are only about five or volumes of it printed in english and the author died a few years back.
Vampire Hunter D (Novel) I believe Dark Horse is printing these in english.
