So I want something new to read, but something that has a good amount already out there. And if possible meet these requirements: Not childish, lolicon, shoujo, or yaoi. I'd like action and a bit of romance and maybe a more mature series.
For example: Berserk.
For reference a few I like are Berserk, Claymore, and Gantz.

I also like Naruto, Ranma 1/2 and things where characters show growth at least

Okay, let me see here.... What do you think has a lot out there, meaning what is a lot to you? And since you used Berserk as your example, I don't think you'd have too much of a limit on how graphic a series can be.

So, here are some series that are completed right now...

These ones are Seinen titles...

Riki-Oh--This is 12 volumes long and has 75 chapters. This is an action series. Kinda graphic but more of a traditional action/martial arts title (like how most "kung fu" movies are).
Jiraishin--This has 19 volumes. This is a series that is episodic... where the viewer mostly just sees how the detective deals with cases.
Monster--This is 18 volumes long. This is about a doctor that becomes obsessed about this one case that drives him to the point of almost breaking him. It's very psychological and I think there is a fair amount of action in the series... it's been a while so I can't remember too much.
Threads of Time--11 volumes and 46 chapters long... but it's a good story with very long chapters with most at 40 something pages long. A lot of action... fights with swords and character growth so I think you might want to check out this one first before the rest.
Trigun Maximum--This is 14 volumes long and 102 chapters. Well, there is character growth but it's not really his but the viewer that grows to understand that the character has more depth then what they first expected... which would be represented as the character Meryl Stryfe... has some romance... but it does not come to fruition.

These ones are Shounen series...

Black Cat--This has 20 volumes and 185 chapters...
Rurouni Kenshin--28 Volumes and 249 chapters.

These are some series that are ongoing in either the scanlation of the publishing process...

Here are the Seinen series
Übel Blatt--This has 9 volumes at the moment and has 75 chapters. But, I will warn you now that some have considered this a Shotacon series because of some evens... but it is not. The character is not as young as he is portrayed... he is around 18-ish. He just became a half elf thing; so, he just looks young. (this is not a spoiler, because it happens within the first couple of chapters that they find this out)
Initial D--This is probably the longest series at the moment and it's still ongoing though it does not have much of a plot anymore. It has 39 volumes and it has 38 scanlated so far; so, if you like cars If suggest this one for you.
Blade of the Immortal--This has 21 volumes and 139 chapteres scanlated so far. This would be a good series to pick up. It has a possibility of romance, but personally I don't see it happening.
Until Death Do Us Part--This has 79 volumes going so far. This sorta has romance.. but not really. I mean it will be cause the main female character will eventually end up with the male lead, but she is too young and this is not a loli series. So, you do not have to worry about this one. It is mostly an action series... a pretty kick ass series. Now, there is some body dismemberment like the lead cuts off this one guys arm... twice so just warning you.
Zetman--This has 10 volumes so far and 111 chapters. A very nice action series with some nudity but it's not done in a ecchi way... it is a mature series not for children, but it would be more suitable then most berserk chapters.
Team Medical Dragon--Right now the scanlation is on chapter 58 of the 8th volume but there are 20 volumes so far and it's still going.
Shigurui--11 volumes and 59 chapters scanlated so far. This is a bloody mess... no seriously it has characters chopping up each other, and blood flying. One guys losses an arm (not a spoiler because it is on the series description page and he is covered in blood) So, if you don't want to see that then skip this one.... but seriously if you read Berserk then you should be able to read this one.... just saying...
Vagabond--277 chapters scanlated so far.

These are the Shounen titles...

Fullmetal Alchemist--97 chapters and has long chapters.
Akumetsu--14 volumes and 119 chapters... it has a nice story that goes on for 19 volumes but I heard it got canceled...
History's Strongest Disciple Kenichi--346 chapters... this is a Martial Arts story that has a character that grows similar to naruto.

These are the ones that I would second...
