This is waaayyy too difficult.
For Seinen I would have to go with Historie, which I have seriously read/re-read at least 10 times (which is sad, considering there is only 40 chapters... and have it practically memorized.), mostly because its really well thought out and interesting. Also deserving in the Seinen category would have to be Parasyte and Battle Royal, both of which were great.
As for Shounen, the ones I enjoy the most are Claymore and Death Note, although Claymore is starting to go off in a weird direction(I'm hoping the author salvages it. Meaning I hope he throws out that whole new plot twist he introduced, because it sucks, or at the very least I hope he executes it properly.), and with Death Note I REALLY hated the ending. Plus the whole Near/Mello thing....

Best deserving shounen Full Metal Alchemist
Seinin Blade of the Immortal
As a matter a fact, i feel these two don't have enough fame.

Mine are pertaining to the United States only, so don't get mad if you see one that you disagree with. 😛
The first choice has to be One Piece. I think the reason why it isn't that big over here is because most people's exposure to it was the fucked up 4Kids' dub of the anime. It made those people think that it was a child's anime when it's way more than that. I started reading it because Oda's art style didn't look like the typical manga art, and now I'm hooked. It's the only manga I read that actually satisfies me every chapter.
The second choice is Eyeshield 21. I have absolutely no idea how a manga about the most popular sport in America isn't one of the most popular manga IN America. But I guess it's because they think, "Japanese making a manga about an American sport? Pass." Hell, I'll admit that I was like that (There's a thread I did somewhere on here that showed it), but it is pretty well-done and it does follow all of the rules of American Football (I just don't like how it takes 3-16 pages for a player to cross a few yards).
The third choice is the Akira manga. I've heard WAY MORE people talking about the movie than the manga, and I personally think that the manga is leagues above the movie.
The fourth is Uzumaki. THIS IS THE CREEPIEST SHIT THAT I'VE EVER READ. I don't wanna ruin it for people, but it's an instant masterpiece and it needs more love.
Oh, and I also second Vagabond, Slam Dunk, and Naruto. Vagabond and Slam Dunk are self-explanitory, but Naruto is also a great manga. It has a solid storyline, well-developed characters, and great action. I think people hate it because it's gotten so popular that it became "uncool" to like ANYTHING about it.

sorry, but I've managed to check only few pages of this thread...
by the way, lots of manga that was mentioned is rather popular, for me it means "even if you haven't read this manga, you are passingly familiar to it".
really deserving manga is Dorohedoro and, maybe, MPD Psycho.
Doro is simply one of the best ongoing titles, completely twist your brain 😀
PS second one of the first post about Uzumaki, this and other Junji works deserve more popularity at least among seinen lovers.
Paradise on my right, Hell on my left and the Angel of Death behind.

Best deserving Shonen;
Buddha, by TEZUKA Osamu. One of the earliest Shonen epics, and one of the best.
Best deserving Seinen;
Domu, by OTOMO Katsuhiro. Simply one of the most underappreciated manga released in English. The storyline grabs you by the balls and only throws you out at the very end, leaving you breathless and somewhat confused, but utterly satisfied.

Hmm, I'm going to take "best deserving" to mean manga that deserve more fame/ respect than it currently gets.
Shonen:
Gintama
Mr. Fullswing
I realize that Gintama is widely known but it doesn't get nearly the attention its Jump counterparts get and it should. Mr. Fullswing is just hilarious, easily one of the top 5 funniest mangas I've read.
In fact, I'd say gag mangas in general deserve more attention since its my favorite genre 🙂
Seinen:
Blade of the Immortal
D-ASH
Again, not exactly breaking new ground here with Blade of the Immortal and it's already been mentioned quite a few times in this thread. Anyway, it's about as good as Berserk and Vagabond (bit worse than the latter, bit better than the former imo) but doesn't get mentioned nearly as much as either. D-ASH is one of my favorite seinen romances and hardly anyone talks about it 😢
LEAST deserving Seinen:
I know I'm gonna get slaughtered for saying this but here me out.
First off, Berserk is great. It's one of the first seinens I read and I'm glad I read it when I did. HOWEVER, the amount of unquestioning, fanatic love it receives rivals Naruto's. There was seriously a good half year period in which literally any "best manga" type thread would be answered with "Berserk. End of thread" and a million other people agreeing.
Berserk is not the end all, be all of seinen but (too) many people treat it like it is. It's still very good though.
Even if the current arc is whack 😀

YKK

Shounen: I am not a heavy Shounen reader... at least not lately, but I would say GTO is the best one that I have read, but GTO was quite famous so that doesn't count then in second place comes Rurouni Kenshin, but that one is also very famous....
I would say Mx0 was a great candidate to the best Shounen I have read, but the Japs killed it and gave it a (may continue later) ending...
So the winner of best Deserving Shounen are Mahou Sensei Negima! and Oh! great agrees with me and Air Gear >_>
Seinen is easier:
Haruka na Machi e and for those that are more into bloody fights than Drama with no blood Shin Angyo Onshi and Threads of time for ya 😉
Dunno How unknown are the ones I like... I mean I am not the kind of guy that want to know everything about a Manga... I enjoy the plot to the fullest and if I have to look for extra information then the writer did a poor job explaining some things... so YEAH 🤣

For Shounen I would say the best ones I know of would be Eyeshield 21 which although sometimes repetitive is very interesting and has some good characters. Also in comparison with Naruto I much prefer the less popular 666 Satan from the Kishi twin who knows when to end the manga. Also MX0 was very good but I agree about the crappy ending. Yakitate!! Japan also because that is a really great manga with a sort of more laid back feel to it.
As for Seinen I have not really read a lot, just mainly AIKI which basically is some strange martial arts mixed in with a lot of fansevice and ecchi. Not really a great one but ok anyway.

Nice choices, but those are predictable, be like me and start reading a ton more shounen and seinen 😃
Let's hope that Naruto and Bleach do get better 😛
