Shonen: Mirai Nikki and Negima
Seinen: Elfen Lied and GANTZNice choices, but those are predictable, be like me and start reading a ton more shounen and seinen 😃
Let's hope that Naruto and Bleach do get better 😛
to be honest i ve read too much shonen(76 or so)...look at my reading and compled list that are almost 65% of all manga i read
and if i wouldn´t like them i would droop them 😁
and i have to add on seinen that i realy like Chobits
and becuse no one mention it Kekkaishi its also really awsome

Just based on my ratings:
Shounen: Aria is the highest rated at 8.3. And yes, serialized in a shounen magazine = shounen, even though it has none of the typical inclusions or plot devices (deal with it, sorry, but a surprisingly large number of people seem incapable of understanding that).
Seinen: Nijigahara Holograph is the only piece out of the 400+ that I have rated to earn a 10. It's intentionality alone would be enough for me to give it this, its amazing art and storytelling is only a plus on the side.

NightSwan also said that she wanted to peg me, once, but I'm not sure whether to take that as a compliment or a threat...

I thought that Comic Blade was both Shounen- as Seinen-oriented, one of those ambiguous magazines.

According to the japanese wiki, it officially identifies itself as a shounen magazine (I checked both that a variety of other sites to be certain.) From what I can make out from the Japanese version, it initially marketed itself as both shounen and shoujo (no seinen involved), but later scrapped the shoujo titles and moved them to its spinoffs.
I failed at navigating their actual site, so there's a chance I could be wrong, but I'm pretty certain here.

Well, I'll add a few that's not mentioned often, or at all, in which are on the top of my worth reading list:
kurohime (it was mentioned before. I think it's slowly gaining popularity nowadays.)
Id (also gaining popularity.)
Edens Bowy (A really good manga that's really not well known.)
Zansho (Unlike most other works of Kitoh Mohiro, such as Narutaru, and Bokurano, these collection of short stories actually make you feel warm and fuzzy inside. It makes me think something must have made his mind snapped between the time when he made this, and his darker works.)
Monster Princess (I really like the characters and their relations.)
Lucifer and the biscuit hammer (an awsome series.)
Mysterious Girlfriend X
Pygmalio
Show Me The Money (Quick enjoyable read.)
Hayate the Combat Butler (Although that one recently became quite popular.
I really liked the back story between Hayate and his ex girlfriend. It was very touching and sad. )
That's all for now.

Anything by Inoue Takehiko especially Vagabond and REAL.
Vagabond wasn't the only samurai-themed work that I have read, but it ignited my interest for seinen manga. As for his other currently ongoing series, REAL, I guess I picked this subjectively since I love basketball or anything related to it. 😛
