I love the backgrounds of Berserk. I'd like to second Gantz.

Id was ok too, especially later on.

I noticed most manga I read have blank backgrounds in most of the panels despite having beautiful art... sad ], but thanks!

Mostly the empty space isn't sloppiness but the usage of space to catch the reader and convey emotions. Also too crowded pages aren't that easy to read. Anyhow, if that's the case you should focus more on josei and seinen in stead of shoujo and shounen.
And of course: no drama's. Seek the manga's that are strong in the story (&art) instead of the personal development of the main character.

Witchcraft works
Natsu no Zenjitsu
Tasogare Otome x Amnesia (I strongly suggest to stick to the tankoubons since they are much better on detail, too bad that there is no scanlation for the tankoubon version).

.... The problem with my suggestions are that they don't have that many issues, with Tasogare being the only one that has more than 1 volume in lenght. At least it's good to trace back the authors.

I know Alichino has beautiful art, but I can't really remember if the background is that detailed in every scene? I remember being really impressed by it anyway...
e.g. Here.
Sorry if this isn't what you were after!
