I'm looking for anything good, although I do prefer non-horror and not too gory stuff. The series must be completed or nearing completion, and not a oneshot.

Some more specifications would've really helped, don't be surprised if you find half of the stuff people list here isn't to your liking/you already read it 🙂
Alichino
Anatolia story
Aqua
D.Gray-man
Fairy Tail
Rebirth
Petshop of horrors
Violinist of Hameln
Kagen no tsuki
And anything Kaori Yuki (second Ludwig Kakumei <3 and Angel Sanctuary), Yuana Kazumi, Mitsukazu Mihara and Higuri You.

I second all of these seinen manga.
I'll divide my suggestions according to demographic, since nothing was specified.
Seinen:
Hoshi no Koe
Solanin
Jiraishin
Emma
Sanctuary
Layhe already mentioned Dogs, but it's a prequel to an ongoing series so I don't know if you'd want to read it.
Shounen
Angel Densetsu
Trigun

I didn't post many specifications cause usually when I do, I don't get much, and I'm trying to explore outside of my usual genre
