I'm completely in love with Rachmaninov's Piano Concerto in C minor, the first movement for the most part. I love a lot of the music from the Black Blood Brothers OST, very modern orchestral music. Beethoven's Fifth Symphony is great, I really like Berliov's Fantastique, and of course some Mozart, though he's not my favorite. Tchaikovsky had a whole assortment of good music in the Nutcracker, but I think my favorite is the Dance of the Snowflakes (I'm not sure that's the actual piece's name). My favorite piano piece is Sonatina in C Latour.

Hm... have to put Yanni on the list. My favorite is Felitsa. But then again, don't forget Yann Tiersen, pretty much every song.

So much amazing music in this list. I'd probably add:

Rachmaninoff's Third Piano Concerto, Vocalise, Second Symphony, and Rhapsody on a Theme of Paganini,

Listz's Totentantz,

Tchaikovsky's Serenade For Strings,

Rimsky-Korsakov's Scheherezade,

Gershwin's Three Preludes for Piano, Piano Concerto in F

Stravinsky's Firebird, Rite of Spring

Khatchaturian's Masquerade Suite, especially the waltz

Mozart's, Verdi's, and Berlioz's Requiem's

Mussorgsky's Pictures at an Exhibition, as arranged by Maurice Ravel

and anything by Leonard Bernstein

You guys are amazing XD To this list I'd would add:

Berlioz's Symphonie Fantastique
Holst's Planetes (Gah, Mars!)

And something kinda random and not exactly classical or piano...John Downland's lute works XD

Schumann's piano concerto in A minor. Oh, and I really like La Campanella by Liszt. And Bach's Goldberg Variations.

Debussy's Clair de Lune is my absolute favorite. But I also like Liszt's Etudes, and Chopin's Nocturnes.

Anything Joe Hisaishi, Infection by Chihiro Onitsuka has an orchestral tone, Arrietty's Song the orchestra version, and my final favorite, Moonlight by Trevor Morris, one not sure if it counts though. xD

I would absolutely second:
Clair de lune by Debussy
Liebestraum by Liszt
and Requiem for a dream!
If i had to add another one i'd go for Shawshank Redemption's theme, that was absolutely powerful to me, just like Requiem for a dream.

Piano:
Quote from Highway-STAR
Ryuichi Sakamoto's Merry Christmas Mr. Lawrence. Epic and grand in every sense of the words.
Especially love his solo piano version.
Ditto. His solo performance feels more intimate. Here's a new link as the one Aelys posted doesn't work anymore:

Ryuichi Sakamoto - 'Merry Christmas, Mr. Lawrence'

Orchestra:
Quote from oriana3k
Other favorite is the Butterfly Lovers Violin Concerto, by Chen Gang and He Zhanhao.
Beautiful piece, even more so when you know the legend behind it. It truly deserves to be called the Chinese Romeo and Juliet. The above mentioned performance is great, although I like the following one better because of the solo violin's timbre:

The Butterfly Lovers Violin Concerto (Soloist: Lu Si-qing)
