wow...to pick just one is impossible. I would have to say Chrono Trigger, FFVII, .hack gu series, and all metal gear games. Just off the top of my head of games i played through more than 3 times each.

Legend of Mana ♥
Space Channel 5 and Atelier series are very good too. The Sims series is very interesting as it is a free game, and I love games that way.

Total War(Empire is really good. *I won The Crimean War for Russian Empire!*) series. Definetly. Or maybe Hearts of Iron (HoI2: Stalin's Plan and HoI2: Doomsday were soooo damn good) series.
Hard to choose y'know?
