I'm to lazy to check what you've already read or what's been suggested so far so I'll just post a list of matching books or series I like.

"The Night Angel" trilogy by Brent Weeks - quite good
"The Kingkiller Chronicle" trilogy by Patrick Rothfuss - very good (incomplete)
"Neverwhere" and "American Gods" by Neil Gaiman - great books
"Rough Draft" and "Labyrinth of Reflections" duologies, "Night Watch" tetralogy, "Spectrum" by Sergei Lukyanenko - I don't know which of these were translated to English, unfortunately...
"Dresden files" series by Jim Butcher
trilogies: "The Farseer", "Liveship Traders" and "The Tawny Man" by Robin Hobb - "Liveship Traders" has changing points of view, but it's an inseparable part of the three.
"The Gentleman Bastard" series by Scott Lynch - very good, very funny (incomplete)
"Wizard of the Winds" by Allan Cole - quite good
"Kill the Dead" by Tanith Lee - not sure about this one, but it's a good book, not very well known
"The Chronicles of Amber" series by Roger Zelazny - a classic series, you've probably read it, but if not, it's a must.
"Rai-Kirah" trilogy by Carol Berg - very, very good and interesting, especially volume one, but the continuation is okay too
"Felix Castor" series by Mike Carey - it's a bit like a Dresden Files rip-off, but it's quite good too.

Monster Hunter International by Larry Correia was beautiful. Action packed, absolutely hilarious, and fun. More on the urban fantasy side of things. Got my bro into it (like the Dresden files) and he basically read my copy until it was falling apart biggrin
First in a series of awesomeness lol

If you like the Dresden Files, you may also like the Nightside series by Simon R. Green. Books are super short...first one reads like a short story, but picks up later.

Already on your To-read list, but Way of Kings by Brandon Sanderson and Runelords by David Farland were entertaining reads.
Way of Kings has multiple POV's though, but only 1 main woman POV. Has some "random" prologue chapters that divide the book up into a couple sections with POV's that rarely/never again show up. However, those chapters are used for world building and a preview of the magic system. As for main characters, I would say it generally follows 4 people: Kaladin (soldier turned slave), Dalinar Kholin (high prince-kind of like a lord?), Adolin Kholin (son of Dalinar), and Shallan Davar (seeks to turn her family's misfortune). I would go as far as to say Shallan is a minor main character since she disappears for a good hundred or so pages...(and I find her the least interesting and not as important as the other three dead ).
Child of Fire by Harry Connolly was also pretty interesting urban fantasy.

I also second the Rai-Kirah Trilogy by Carol Berg.
