Dr. Stone is pretty much exactly what you're looking for. After some introductory chapters focusing more on the energetic character, the story switches to Senku as the MC. From there it's all about how he slowly starts to bring back modern day tech in a stone world setting with his extensive knowledge of chemistry, engineering, etc.

Second Dr. Stone and Jin (liked the Jdrama especially)

Zipang (advanced military technology in WW II)
Nobunaga no Chef (becomes chef of Nobunaga)
Amakusa 1637 (becomes a religious figure and tries to stop the persecution of christians)
7 Seeds (man vs nature / survival after civilisation no longer exists)
Ore no Shibou Flag ga Todomaru Tokoro wo Shiranai (Novel) (tries to change the future in a video game)
