I'd choose Mortal Kombat, because everybody can kill everybody on a regular basis in the games and the story. The other two only kill people when it's important to the story, or when those few characters have a secret move that can automatically KO the person and counts as a "kill".
That, and all of the MK people are freakishly sturdy and have lots of stamina. They still stand up and fight despite losing all that blood when they get hit.

I'd say KOF, because it has a lot of characters and has some tough bosses. MK characters must be weak because a lot of blood comes out of them from a single punch, either that or their punches are really powerful. I prefer playing Street Fighter though.
