I like instrumentals that have piano and violin, mainly. I'm not much into strings, so mind my taste!
Personally, I recommend the OSTS from:
Bartender - Composed by Ootake Kaoruko. It's mostly jazz piano. Main instruments are piano, violin, cello, and etc. My Favorite, Then this one,
Shingetsutan Tsukihime - Composed by Toshiyuki O'mori. Iza-Yoi.
xxxHOLiC and Genji Monogatari Senneki's OST by S.E.N.S PROJECT.
xxxHOLiC: Manatsu no Yoru no Yume (movie) OST by Saitou Tsuneyoshi. The OSTs are gorgeous. ;]
