How about The Sky Crawlers? I can't think of others where aircraft is actually a focus, not just an appearance....

I assume you distinctly want airships--no overlapping with spaceships--yes?

Well, you wrote "the princess and the pilot" in your first post, so I assumed airplanes are ok too. If you specifically want airships than you could try:

Laputa Castle in The Sky
and maybe also Eureka Seven
