I know that manga is classified into demographics based on the periodical in which it is published, but many shonen manga contain graphic and somewhat mature material. What are some that should be seinen?

Deadman Wonderland - Eyeballs being ripped out of sockets, explosions of body parts, and little girls holding severed heads of fallen prison guards. lolz That in one chapter they blurred out some of the graphic scenes and then like 2 chaps later they show a down pour of extremeties.
MPD Psycho - This has been discussed to death I don't think any more ellaboration is needed on this subject.
Most old school shounen like Video Girl Ai which has more boobs than even some seinen.
And from what I've heard Claymore is pretty "mature" as well.

Doubt (TONOGAI Yoshiki) just because of its gore, and Sayonara Zetsubou Sensei because of the maturity level of most of its humor.

I havr to disagree with MPD Psycho, it really is a Shonen. It's not a very mature manga, and mainly relies on shock factor and excessive gore more than anything (same goes for Deadman).
Now Buddha, there's a Seinen for you. Despite being labelled Shonen, it's a shitload more serious other Shonen like One Piece etc.

Well I guess that all depends on how you distinguish between the 2. DW has a very dark story about a kid who's framed for murder, put in a prison where he has to compete in what are essentially deathmatches in order to not be poisoned due to the prison's demented rules, while coping w/ the fact that everything around him gets twisted into a revolting nightmare.
MPD Psycho, well yeah you got me there. But it doesn't really include the normal cliches so it just feels more mature to me.
Although there are some shonen I feel that'll just go over the target demographic's heads w/o any of the gore or sex like Negative Happy Chainsaw Edge

I can agree with the mention of Claymore. Its definitely able to appeal to a much more mature audience than most shounen titles. I would venture to say that it really does fit both categories at once, its simple enough to remain shounen, but the serious tone gives it a definite appeal to a more mature audience as well.

Eureka Seven is seinen IMO. despite of those childish mecha fight.
but the deep plot is definitely not for younger audience/reader.

Not so much appeal, I think that as far as it goes anything that has violence and has a decent plot will probably appeal to a younger male audience. But I do think that complicated plots that require a great deal of thought tend to drive away a younger audience. Claymore appeals to both since it has about the same complexity as most shounen manga, but because of the serious tone it can appeal to more mature readers as well.

Actually any series that involves medium violence doesn't have to be seinen on its own, after all compared to hokuto no ken it's just child's play things like DMW
