If we're talking about shounen then I don't mind a lot of volumes like Prince of Tennis.
Recently, I'm hunting down bookstores for Bleach and Death Note.

For shoujo, I usually give up at volume 9 or so but I made an exception for Anatolia Story or more known as Red River. It's 28 volumes long and I had a hard time finding this one in bookstores since it the translated version was published years ago before I even started collecting mangas.

Another one is Mars which lasts for 15 volumes long. I just love how romance and a bit of psychology meets in this series. XD

pearlesque, you write so much it's nearly impossible to reply without feeling deficient, so i shall not try to hold myself up to you.

My definition of epic is based more of on the setup and execution of the manga then the actual length. Like ShadwsofArchonia said oneshots can be 'epic', often more so then mammoths like Ranma which is more like a series of oneshots that happen to have the same characters. This is not to say that I would define epic to include oneshots, thought i do disagree with your hard and fast rule of 10.

The rules i have in mind would be something like this: shounen 10+, shoujo 7+.
This is because typically in a shounen work the density per chapter of character development is less then shoujo. Also would be the criteria of an epic plot. I think a good indicator of this is how long it would take you to get someone up to speed halfway/three-quarters through the manga after the first chapter. Taken in to account should be how easy this is to do, if you cannot remember what happened at a certain point or why, then it cannot have been that important (assuming of course that you are equally familiar with the manga you are comparing in this way). Another rule would be how well do you know the main character and immediate supporting cast. For me this is the biggest difference between Naruto and Bleach. In my opinion Bleach is more focused, naruto has about a billion characters and each one gets their 15 minutes (especially in the Anime) which tends to make the whole plot wander unnecessarily.

well that is my criteria for 'epic' and the most addictive ones (imo) that fit the criteria are:
Bleach
Nana
Crimson Hero
Skip Beat
Glass Mask
Naruto
GTO
Hana Yori Dango
Mars

some of those with epic moments that i am/was addicted too are:
Perfect Girl Evolution
Ouran Highschool Host Club
Hikaru no go
Happy

also, I'm probably in the minority here but i often get addicted to manga i don't actually like. but does anyone else do that?

I've been reading "one piece" for like 3 months or something. It goes on forever. That is my vote for epic.

Nijigahara Holograph.... it's 1 volume but it's as epic as they come.

If I really must state multi-volume titles, Vagabond and Mugen no Juunin have a real "epic" feel about them.

I like reading long series as well... Most of my favorites have already been mentioned, but there are some that haven't been:

Angel Densetsu - I find this manga hilarious. That's about all I can say... It doesn't have a deep plot or anything, but I still really like it.

Angel Sanctuary - One of the first shoujo series I read. I remember that originally I didn't want to read it because I thought, "Incest?!? Ugh..." But it's a good action/adventure series.

[a]Battle Angel Alita[/a] - I don't know why this haven't been mentioned yet. This is one of my top 10 seinen series. Well, the original series was only 9 volumes long, but Last Order is a direct continuation to it (minus the conclusion in the original).

Battle Royale - I didn't like this as much as the others I've mentioned, but it's a pretty good series. Lots of characters, but they each have their own back story.

H2 - I like adachi series... One of the first sports manga that I read.

I"s - Another manga that I read a long time ago. I remember liking it a lot. It's listed as a harem series, and there are a lot of girls in it. But the main character stays true to his girlfriend (when she becomes his girlfriend) the whole time. I remember thinking the last couple of volumes seemed really sad to me at the time.

Jiraishin - It's a police/ detective manga. There isn't much investigation to it, it's mostly action. It's pretty dark, but I like it.

Kareshi Kanojo no Jijou - I liked the characters in this series a lot. It started out interesting and atypical, but got shoujo-ish later on. But I don't mind, since I do like the characters.

It's hard to keep on thinking of comments to leave... so I'll just list them without comments from now on.

Katsu!
Kiseijuu
Kodomo no Omocha
Rough
Salad Days
Sanctuary
Tokyo Crazy Paradise
Trigun
Yokohama Kaidashi Kikou

And that's it for my completed list.
