Shitsurakuen - Girls turning into weapons yea i know its a little cliche

Taboo-Tattoo - tatoos that give special powers

Mushi no Medama to Teddy Bear - This instantly popped into my head because of the spoon

Gantz - a few strange weapons and later on there is even a giant robot for about 2 chapters but its a really good series

3x3 Eyes - magic, monsters, and immortality also a good series

How about Ga-Rei. While the protagonists have conventional weapons, most other characters don't.
Spoiler (mouse over to view)
I mean just look at that crazy suitcase which fires tons of rounds, or the drill. And don't forget the automatic snow-ball cannon

You could try Deadman Wonderland.

Or Dansai Bunri no Crime Edge (only nine chapters so far).

Deadman Wonderland. read it

Dansai Bunri no Crime Edge I should have mentioned this earlier but unless it's completed or really really REALLY good, I won't read a manga under 30-40 chapters

Hunter x Hunter - I strongly second this. Weapons include pins, cards, blowdarts, briefcases, bees, snakes, motorized scooters, yoyos, and tasers. Really bizarre weapons in this series.

Try Eat-man

Spoiler (mouse over to view)
Bolt Crank is a wandering explorer who eats everything, from radios to swords to a chaser of gasoline. In particular, he eats things that may come in handy later, when he can transform the flesh of his arm into the mechanism he's consumed!
