I was wondering do you know any manga where the skills of the lead (preferably heroine) is developed like Skip Beat (acting), Glass Mask (acting), The One (modeling) or Slam Dunk (basketball)?

maybe Ashita no Ousama, the heroine improves as a scripwriter.
oh, and definitely Oishii Kankei, she improves a lot as a cook. At first, she almost wasn't able to cook anything, and she definitely improved her skills as the manga goes on.

Piano no Mori The lead is male, and his skills are developing, but the female lead also develops her skills as times go on.

If you want a weird one I read one about the devellopment of a suicidal lesbian matador yesterday XD She starts from scratch so it definately fits: Golondrina
Jisatasutou also has a similar feel as well but they start out suicidal and rather introvert and then slowly learn the skills to survive.
Chihayafuru is more normal, sprts style manga where she learns a sports-like card game
Holyland learns fighting styles to turn from a wimpy shut in to someone he can be proud of
Kokou no hitou climbing skills
Nononono ski jumping
V.B.Rose fashion, dress making
