I'm looking for manga where the main character used to do something but doesn't anymore even though they were good at it. However, even though they've "quit", whatever they've been involved with comes back to haunt them or influence them later on.

I also really love stories like this!! ..but the only one I can remember..which is kinda like what you're looking for is Zennou no Noa - The World of Lostmemories

This reminds me of Watashitachi no Shiawase na Jikan, one of my favorites of all time.

Liar Game - Con man decides to live a cleaner life, but then is roped into a swindling game by a gullible girl who has been tricked. He acts as her adviser.

Kurosagi - An ex-con runs a swindling protection business where he helps clients expose fraud.

Second Zennou no Noa - The World of Lostmemories

I wonder if Rurouni Kenshin, Black Cat Hunter x Hunter or Trigun count. One of the main characters in all of these manga used to be fighters/assassins/mercs but then decided to live a more peaceful life. Their past comes back to haunt them in one way or another.
