I am thinking of Demon Diary. Is this the one? I'm not sure if you found the manga yet, but Jikuu Ihoujin Kyoko kind of sounds like what you are looking for. I hope you find what you're looking for.

Pygmalio? It has monsters, the mc boy has super strength inherited from his goddess mother (half human/half god, like hercules), has mermaids on one of the covers, he's a prince so there's plenty of castles. There's a bit where he meets his grandad the God, though whether he was searching for him isn't clear. Skimmed through it and there's so many goddesses and girls the 'lady' could be any of them. Though it could be some Goddess called Olea? though its his aunt not his sister.
