Anyways, I'm looking for a 'romance' like the one between Shinwoo and Seira in Noblesse(red haired dood and the white haired girl) but where it actually goes somewhere.

The thing is, it never went anywhere & there was hardly any relationship in my opinion or communication between each other. So could you explain what kind of relationship they had?

I guess he wants a princess-like female lead with a cool, haughty attitude and a hot-blooded, typical shounen male lead.

I don't know if I can really explain what it is I like about it, because I think it's a combination of things, and if one thing is missing, the whole thing falls apart.
But I guess I have to try.
Okay, first of all, there's that obvious status/social/age/maturity difference between the two, he's your typical shounen school boy who's pretty good at fighting for being a human, and she is a 200 year old vampire, who's rather expressionless, and she's really good at fighting too, but thanks to her vampire powers she's way more stronger than him. Also she's 'nobility' and tries to always act polite and thoughtful.
The thing I really liked about the 'romance' between the two, is that she does these tiny things to show affection, and everyone blows them out of proportion, like she just did something really big, and I like to think of that tiny thing as something big, that that tiny act is a strong sign of affection from her.
I also like that they're not always around each other, so the author doesn't have to come up with forced dialog or other stuff, that would probably destroy the small moments they have together.
So to condence:
* The guy should be an average shounen guy.
* The girl should be a mature, high-status (princess, nobility), powerful, strong, thoughtful, feminine. I think I'd prefer if she wasn't a princess but something below it, it's to cliche with princess. I'd also like it if she was older than him.
* The romance should start from her side. I think it should be a bit out of this world for him to consider her as a possible romantic subject, as she's way above and beyond him.
* They shouldn't always be around each other, and should live their own lives, and then only have small moments together.

The one thing that comes to mind from your description would be Girls of the Wild's, but the male lead doesn't really fit the average shounen guy criteria.

Otokonoko ni Toriko - Barely fits your criteria. Girl is more experienced than the guy and he's a foot-in-the-mouth tsundere. She finds his antics amusing and teases him sometimes. The guy actually resembles an uke out of BL more than a shounen dude... lol, I tried.

lol I suddenly think of Sesshomaru and Rin in Inuyasha, though the roles are reversed. huge difference in age, race, status... The guy is a demon among the strongest, with this noble and almost divine demeanor... while the girl is pretty much a powerless human girl. Small signs of affection but very touching. And most of all, nobody can be sure if there is even a romantic relationship between them X'))

I haven't read it in a while, so I'm not sure where it's gone, but that sounds like the relationship between the protagonist and an enemy leader in Akame ga Kill!

The one that fits the most what you want is Cheeky Angel, at least when the female lead is in public, if not she's more tomboyish than cool princess. But the romance is mostly unrequited at the start and from the male lead.
You could also check Shokugeki no Soma. Male lead is typical shounen, female is
what you want except she's not really mature but acts more like a spoiled child at times. Romance is not really present yet (but at least there are obvious hints unlike your reference in noblesse), but maybe it will improve later on.

I'd like to think that Dance in the Vampire Bund fits. Girl is more then princess though, rather then less. Be wary however of border line h moments of nudity.
