Well, the majority of the ones I found were yaoi (but there was alot!) but here are the others:
Her Majesty's Dog - probably best fit. Guy in it can turn into (guard)dog.
Wolf's Rain - Wolves (orly?). It's a seinen but I think they're cute...
Ranma 1/2 - Piggy, duck, might have been some others too, it''s been a while since I read it. Good (hilarious) read nonetheless.
Oumagadoki Doubutsuen - Well everyone turns into animals, it's a zoo.

Absolutely second Full Moon wo Sagashite and Fruits Basket

Fruits Basket came to mind first -- but I'm guessing most would think of it...
