I'm looking for manga in which the protagonist is seemingly ordinary, but turns out to be a "killing/fighting machine" (figuratively or litterally). I'd like it if they were ignorant of it and lived a normal life, but a series of events awaken these instincts. I'd also prefer it if the protagonist was female.
Kinda like the female protagonist is being mugged/raped/attacked in the usual cliche shoujo way, but instead of her prince charming rescuing her, she snaps/blacks out/etc her instincts kick in and she demolishes her attackers.

Change 123 is sort of like that she is a fighting machine when she is in danger but all other times she is normal and hates violence she is aware of it but still it is not fully understood and there is an even more powerful thing inside her as well that would be the ignorant to her power kinda thing.

The two main female roles is Angel Densetsu fit your description and both are kickass martial artists . Same mangaka as Claymore, it seems to be his first manga so at the start the art sucks but it gets real better so just keep with it.

How about Gunslinger Girl? Unfortunately, the protagonist is perfectly aware that she's a killer, so you probably won't like it.
Switch also fits (kind of), but in this case, the 'fighting machine' is a guy- and that part of his personality doesn't appear very often.
