There's a couple that I really like, but if I was forced to choose just one it would be The Legend of Maian
The first volume really offered a great beginning with a lot of potential. It's just too bad the group scanlating it seems to have shut down (last release was in February).

Masca
Safe Again Today
Shin Angyo Onshi
Honorable Mentions:
Angel Shop
The Bride of the Water God
Ciel
H2O - It never developed into the great manhwa I expected, but I still can't forget the promise it showed at beginning.
Pahanjip - There was one story I really liked about a woman who takes revenge for her husband's death. Another story I liked was about a wife who tries to protect her husband from a monster.

I don't read that much manwha but there sure is some interresting ones.
Without a doubt the best would be Shin Angyo Onshi (though, it's arguable whether it's a manwha or not...)
After that, I really love Ares and the other serie of the same author, aka Nephilim John
After that, I could add Kuokami, maybe UnbalancexUnbalance though not exactly the best...
And other manwha I read didn't really strike me as excellent (I don't even remember this H2O Odette recommended to me, even though I read it some time ago, and never managed to finish Masca yet...I should one of these days)

Undecided it's a series of shorts with an amazing art style similar to Matsumoto Jiro and Matsumoto Taiyo.

I've blocked the second half of H2O from my memory, although probably for different reasons than your not remembering it at all. Masca is stuck on scanlation hold, so I just keep mentioning it in hopes that a scanlator will take an interest in it again. I don't know how it ends myself.
Safe Again Today is complete, though, and very cute and munya-worthy. Because the series got cancelled, most people feel disappointed by the "abrupt" ending, but I actually liked that the story didn't go into more dramatic or romantic territory. Now it lives on in my head (apparently, like many other series that inspire me and whose endings I selfishly disregard).
Edit: Ah, I didn't realize it before, but the author of Hotel, a oneshot I like a lot, is Korean (the publisher is Japanese). I don't know whether to call it manhwa or manga; like Shin Angyo Onshi, it is a hybrid. Interestingly, this distinction only seems to exist in English because manga/manhwa/manhua is actually the same word, which refers to any and all comics.

Anything from RYU Geum Chel hahaha. He is great! The Breaker is another Manhwa that I like a lot. Witch Hunter deserves to be among my favorites so I'm adding it on.
