Whats the most poetic yaoi that you've read? As in, there's something poetic and beautiful about the choice of words, story, panneling, or art.
I'm searching for shounen ai or yaoi that dosen't have just one dimension to it

What a great question! I have some few candidates. 
First, one of the most poetics yaois I ever read is The Sleeping Man by Saika Kunieda. It's a sad story but truly poetic and beautiful.
The second that occur to me is also by Kunieda Saika (under the pen name of Sakai Kunie) and it's called The Winter Walk. It's about a young man who is making questions about his life and death.
The second story in the manga Kudan no Kuroneko it's another one that really touched me because it's about a love who is so strong that survive even in afterlife. Plus you have the incredible art by MIZUKAMI Shin, one of my favs mangakas. Pure poetry for me.
Shinon is a beautiful short story that charmed me because it's so simple yet so poetic.
Under the Sakura Tree it'a a very short story wrote about a poem by one of my favs mangakas, Myiamoto Kano.
Itsutsu no Hako no Monogatari (Five Box Stories) have a story called The Setting Sun that is very lyrical and poignant. IMA Ichiko is a mangaka who writes incredible supernatural stories with ghosts and most of them are written in a very sensitive and poetic way.
These are what occurred to me by now, I'll post more if I recall some. I hope you enjoy.

Anything by Sahara Mizu/Yumeka Sumomo feels poetic.

Let Dai comes to mind, and 1999 Shanghai. Actually, I think that Shokubutsu Zukan by Setona Mizushiro also fits.

If you're looking for poetic, you can't get anything better than Let Dai Everything is poetic about it, high in drama, and a real emotional roller-coaster. The entire thing is pretty much written in prose, beginning from the first page:
I'm also going to second Yumeka Sumomo, and Miyamoto Kano (actually, all of the suggestions here are really good - 1999 Shanghai being another favourite) but I urge you to read Let Dai first. Or maybe you should read it last, to save yourself from heartaches.
If anything, even if you end up hating it, it will leave a deep and unforgettable impression - one that you will remember for a long time.

This makes me want to read it all over again. I love, love, love Let Dai.
I'd like to add Fujunna Renai . Maybe not so much the dialogue, but the fluidity from panel to panel, and high contrast of the art is very nice.

Oh, Thomas no Shinzou without a doubt. It's beautiful. Check out Hagio's other shounen-ai, as well.
Along the same lines is Kaze to Ki no Uta, which I don't like quite as well as Thomas but which is also pretty poetic.

I second Kaze to Ki no Uta. It's definitely poetic. Consider it has tragedy and French themes which make it my #1 yaoi. I just love depressing story.

I really love works from INARIYA Fusanosuke 
My favorites are Hyakujitsu no Bara/DJs, Blue Nathanael, Zion no Koeda, and Giglio.
Hyakujitsu no Bara - My spirit was only rotting in an empty shell until the call of your voice awoke me. All those times, I hurt you terribly with my unquenchable thirst, and still --- your arms were so warm.
Giglio - People refuse to talk about that time, as if trying to forget a bad dream. It's just like sewing up an uncleaned, putrefying, unstoppable wound.
Zion no Koeda - After the storm, in the beginning I sent a bird named Hereb from this ship for help, but the large bird never returned.
I often think about that raven named Hereb that was sent away. As a punishment for a small violation, the black bird was seperated from his mate, and sent away on a mission to a sky without branches. It didn't come back. Was "he," after the storm, able to reunite with his loved one again, I wonder?
An unreasonable diaster made to steal all life. In that miniature garden, why did I tear apart something so important...with my own hands? Leaving the only memory of pain.
Inariya Fusunosuke's art is hardcore, but her stories/plots are amazing.
