I'm looking for something where the main character is traveling through the world. Like Eat-man, Blame!, Mushishi or Kino no Tabi -the Beautiful World-. Trigun fits, but I'd prefer something a little more episodic.

I think you'll like Ou Dorobou Jing and its sequel.
Black Cat also fits, but it isn't very episodic. Still, it reminded me a lot of Eat-man, so you should give it a shot.
Tsubasa Reservoir Chronicles - Very episodic for the first 13 or so volumes, but becomes more purposeful afterwards. There is an over-arching plot-line too, so it isn't very much like Mushishi or Kino's Journey...
Ludwig Kakumei - Somehow, I don't think you'll like this at all...but you just might, so I decided to throw it in ^^
Haven't read them, but Id , Chninkel , Hero and Violinist of Hameln might work too.
