Well, I'm looking for a good josei manga or manhwa to read. I don't mind any other type of genre but no smut or ecchi please. Ooh and no one shots and at least more than 5 chapters.

7 seeds - Incredible series about survival by Tamura Yumi with an amazing, well-rounded cast of characters and character development . The plot is ambiguous tbh but the different arcs are engaging and really great; you learn about the history and the aftermath of the meteor strike as well. It has romance in it but doesn't make it a big deal or a main plot point, no smut at all
Sakamichi no Apollon - Another great series with character growth. It's a SoL about a gloomy kid who learns to play jazz with his new friend. Also no smut since it's about friendship more than love.

Just a heads up the beginning might seem slow since it's introducing the "worst team" in the series but it picks up once you get to the second team introduction.

Oishii Kankei - a young woman who was raised to follow a traditional path decides to become a chef. One of my favorites.
Gokusen - this is fun, a yakuza princess becomes a teacher
Saiyuki Gaiden - all the Saiyuki series but the first are josei, and I think much as I love the others that this is the best
Second 7 Seeds, have your tissues handy.
I love josei, but most of the rest I've read are smut.
These are all on my list of josei that I have to read, but haven't got to yet, shame on me.

I second 7 Seeds and Sakamichi no Apollon. I highly recommend the anime adaptation of Sakamichi as well. It has a gorgeous soundtrack. And hell yeah, Gokusen is a ton of fun.
Your request is rather broad. I can think of lots of great josei series so I'll just list a few of my favourites.
Kuragehime Quirky, messy, lovable characters and consistent fun. Higashimura has this ability to balance humour and sadness masterfully. If you don't mind autobiography, her Kakukaku Shikajika is also great. It's subtle but it has a bittersweet air.
Annarasumanara Insightful and captivating. Ha Il-Kwon uses the webtoon format to its best. The art is beautiful and very deliberate in the way it's stylized.
Nineteen, Twenty-One Nice, slow-paced slice-of-life with a side of romance. It's simple but sweet and satisfying. Read especially if you like cats. Or if you don't like cats.
Udon no Onna Shorter series with a refreshing romance. I love Est Em's art style and it's well-suited to the tone of the story.
14-sai no Koi Adorably innocent and refreshing. I'm always happy to read it. Nice, clean art and cute characters. It's a lovely little feel-good manga.
Cheese in the Trap Another webtoon. Sul is one of my favourite manga heroines. She's smart, pragmatic, perceptive and very likable. Slow romance but it's rewarding. Soon Ki does very well in weaving the mystery around Yoo Jung.
That's just off the top of my head. I might add more later.

I third 7 Seeds! The first part can be painful to read, but it has The best group character development anywhere!
Edit: And Definitely seconding Cheese in the Trap! lol, several posts were made while I was typing my own post. xD
Adding:
Kimi wa Petto - A successful career woman is overstressed from how she's viewed because of her success and the pressures of society. She finds a bum and lets him stay with her as her 'pet.' What follows, however, is an incredibly heartwarming relationship, that reminds you that there's more to life than looks and social status.
Kuragehime - An apartment full of NEET girls. To save their old-style building from being demolished and converted into a large complex, they somehow get roped into trying to make fashion. The title is after the protagonist female, who is obsessed with jellyfish.
Seigi no Mikata - This one is hilarious. This follows the life of a younger sister whose life is in constant turmoil because of her devilish older sister. Yet all the mean antics of her sister tend to end up with good consequences, so the rest of society mistakenly thinks of her as a model citizen, much to the anguish of her family who knows her true face. xD
Ashita no Ou-sama - Charming story about a girl pursuing an ambition as a writer for stage dramas.
Nodame Cantabile - Lighthearted series about music prodigies.
Tagged as Shoujo, reads completely like Josei:
Oooku - An incredible story of an alternate ancient Japan where a disease has killed off a large percentage of men. Describes the social transitions to a female-dominated society in an incredibly realistic way.
Nana - It follows the friendship of two girls named Nana, as well as their relationship and ambitions. It's an amazing story. Too bad the author stopped writing it, but it's still really worth reading what's already there.
Basara - By the author of 7 Seeds. A grand tale of romance, adventure and social change.
Tagged as Seinen, reads like Josei:
Emma - Set in victorian England, it has a surprisingly charming cast of characters, and really brings the period to life.
Otoyomegatari - Same author as above, Gorgeous art.

ane no kekkon simply because of the witty dialogue and the two main characters are amusing as hell in a dry and black sort of way.
