Old as in before 2000.
By Long I mean 400+ chapters
preferably completely scanlated.
no preference about genre or demographic.
I read Sangokushi a while back and it was long old gold that I found purely by chance. If you know about any series like that, please reply

Ashita no Joe, Basara and Eyeshield 21 are all what I'd think of as old and long......and yeah, all completely scanlated.

You know, when I saw this I was like "easy" but it turns out most of the series I think of as "long" are more like 200 chapters than 400.
I wasn't sure if you meant completed by 2000 or started in 2000, so I included both.
400+:
Major. Its completed scanlated, although once you get past a certain point the scans are super low quality- I think a group right now is going through slowly and upgrading the poor quality ones.
150+

Jojo no Kimyou na Bouken, maybe, if you consider all the different parts as one. Serialisation started in the 1980s and is still ongoing. Parts 1-7 are completely scanlated; part 8, which is the current arc, is up-to-date. Not exactly what you asked for, perhaps, but thought I'd mention it just in case. 400+ chapter series which haven't long since been abandoned are vanishingly rare, so...

- One Piece (from 1997 - ongoing with 927 Chapters)
- Detektiv Conan (from 1994 - ongoing with 1024 Chapters)
- InuYasha (from 1996 - 559 Chapters)
My suggestion:
- Karate Shoukoushi Kohinata Minoru (from 2000 - ongoing with 475 Chapters)
- Crows (from 1990; itself is Crow short, but the univers is pretty big - just look TAKAHASHI Hiroshi
Not scanlated:
- Jjang (from 1996 - 74 Volumes)
Don´t meet the terms, but still old and pretty long
- Change Guy (from 1998 - 338 Chapters)
I think the well known/loved Mangas are long for a reason ... 🙄
I wonder why there isn´t a Categorie for long series 🤨

You should probably check Ryuurouden if you haven't already done so. The manga started in the early 90s, for 37 volumes. And was followed by 2 sequels. It follows the same themes as Sangokushi, which is no coincidence since both are (loosely) based on romance of the 3 kingdoms. If you liked Sangokushi, chances are you'll like this one too.
Big minus: the scanlation for this series dropped a while ago. If you can manage with raws, it might not be a problem though.

Dragon Quest - Dai no Daibouken
From 1989 with 349 chapters, an incredibly straightforward shounen based off of the early Dragon Quest games.
Like the games, it uses every cliche in the book, but it does it in such an earnest way that it's really fun. It starts off kinda okay, but it really gets good as it builds up over time.

I didn't expect this many series to go under my radar all this time I spent searching with Advanced search.
